A Poussin is a young chicken weighing between 350g and 450g.

Our Canter Valley Poussin are derived from the Ross breed and are produced by a specialist farmer in North Canterbury, New Zealand. Raised in small flocks on a carefully selected local farm, the birds benefit from attentive husbandry and a controlled rearing environment.

They are fed a wholesome, cereal-based diet and are raised without antibiotic growth promotants. This approach supports consistent quality, clean flavour, and naturally tender meat.

Culinary Use

With their naturally delicate flavour and soft texture, poussin are ideal for whole roasting, grilling, or spatchcock preparation. The small size allows for quick cooking, crisp skin, and juicy, evenly cooked meat—well suited to both classic and contemporary dishes.
